The term tataki refers to beef or fish that is seared, then chilled, marinated and thinly sliced.
I have been making this recipe for about 6 years now and everyones eyes still light up when I tell them it is coming out. It is something that I do for special occasions because of the length of time that it takes to make. Not so much in the active cooking, but the fact that you work on it for about 30-45 minutes and then you wait 4 hours while it is marinating. This may not seem like such a big deal until you’ve had it and can’t wait for it to come out again.

This was a classic in our house when I was growing up thanks to Joan, a friend of the family and excellent cook. Now , after asking my mother (who would call Joan) for the recipe I don’t know how many times, I have added it here so I can keep track of it and share it.
This is an easy to make, inexpensive dish that tastes great! It is even a great foundation receipe for change. Maybe add a little extra spice by adding more green chilies, or get really crazy and try different seasoning all together to make something completely new.
Be sure to try it out and let me know how you like it or what you have done to improve on it.

I keep hearing people ask if we are keeping Kellen in a dungeon since they aren’t seeing pictures of him. Well, not quite a dungeon, but at least a loop in the time space continuum so we can keep him a baby as long as possible. On top of that, he and Mikayla have been keeping us busy along with everything else that is going on in our life.

Kellen Christopher Widhelm was born at 9:55 am on 3/12/2006. He and his mother are both in great health. Kellen was 21″ long and weighed 8 lbs 12 oz.

After an exciting 365 days with Mikayla, she has now survived 1 year of Jen and I’s parenting. I think she made it okay. However, I am going to wait to pronounce the final verdict for a while. Maybe 17 more years.
Her birthday was spent with her cousins Ashanti and Lilliana and her Aunt Stacie. A good time was had by all. Be sure to check out her birthday pictures in the gallery!!

Now that she has three teeth soon no food will be safe. She has already started chewing through anything she can get in her mouth. This includes dad’s toes. Talk about a surprise!
